Easy Crock pot Beef Roast
Ingredients
3 lb. whole Beef roast (your choice of cut)
8 oz. baby carrots
8 oz. whole mushrooms
3 lbs. russet potatoes (skin on or off, your choice) or use red fingerling potatoes cut in half
2 10oz. cans of French onion soup
1 15oz. can beef broth
2 T. minced garlic
2 T. paprika
Salt and pepper to taste
Instructions
Place all liquids into a 7-quart slow cooker mix well. Add garlic. Paprika, salt and pepper. Stir in ingredients. Add roast, carrots, and mushrooms. Cook on low for 8 hours or on high for 4 hours. When done remove roast from slow cooker and place on a plate. Then in a large bowl place all the vegetables and potatoes. Serve family style.
