Ingredients
3 cans of drained black beans.
1 small yellow onion
1 T. coriander
Salt and pepper to taste
8 oz. shredded Mexican cheese
8 - 12” flour tortillas
Instructions
In a microwaveable bowl, heat beans till hot. Add onion, coriander, salt, and pepper. Mix well. Place a large scoop of bean mix in the middle of the tortilla and add 1 oz. of cheese. Roll the burrito and set aside. Repeat until all burritos are rolled. Heat a large non-stick skillet to medium heat and brown burritos on both sides. Hint: I use a hamburger press for this step. Serve hot.
