I always appreciate when other people have gardens and share their fruits of their labor. Someone at work left out some zucchini. At first I thought it was a cucumber before I realized it was a zucchini. I did want to make noodles with it, but I don't own a tool to easily make it into noodles. I had to do it by hand with a potato peeler.
I only did half of the zucchini into noodles. I had a little bit left of some rotini noodles, so I cooked off the noodles and added some chopped onion and spaghetti sauce. It was a tasty meal for my son and myself.
For the other half of the zucchini, I made zucchini bread using this recipe. I did add a banana to make it zucchini banana bread.

I actually prefer zucchini noodles to pasta, here we call them courgettes so I call the noodles courgetti and use instead of spaghetti. I've also tried zucchini muffins but not bread yet.
