Coffee Cookies

As soon as I have seen a blog post on Coffee Biscuits. I knew I had to make it.  I noticed that is a little bit similar to Never Fail Cookies.

These coffee cookies are also simple. It just has flour, sugar, butter, baking powder, and instant coffee dissolved in water.

It also is a small recipe, it only made 10 cookies for me.

This recipe has:

1 cup flour

1/4  teaspoon baking powder

1/2 cup sugar

6 tablespoons soft butter

1 tablespoon instant coffee

1 tablespoon water

Combine flour and baking powder in a bowl.  Combine water and coffee in a separate bowl. Cream butter and sugar.  Add in the flour mixture and coffee mixture. Shape into teaspoon size cookies and press down lightly. If desired, coat in sugar. Bake at 160 degrees C. I baked it at 325 F. I ended up slightly overbaking my cookies cooking them for 17 minutes. So I am going to stick to 10-15 minutes.

Even though I ended up over baking my cookies, I still enjoyed them.

Made another batch that is cooked at 350 degrees for 10 minutes.
