Looking through my vintage cookie book and found an applesauce cookie recipe. I had individual snack cups of strawberry apple sauce, so I made a few changes to the recipe to make Strawberry Applesauce Cookies. The original recipe had spices like cinnamon. nutmeg, and cloves. It also called for cold coffee. I left these ingredients out as I thought it might interfere with the strawberry flavor.
So here is my recipe:
1/2 cup shortening
1 cup sugar
1 eggs
1/4 cup milk
1 cup Strawberry Applesauce (two 4 ounce snack cups)
1 teaspoon vanilla
1 3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins
Mix butter, sugar, eggs, applesauce, milk, and vanilla. Add the dry ingredients. Chill dough for at least 2 hours. Drop by teaspoon about 1 inch apart on greased cookie sheet.Bake at 400 degrees for about 8 minutes or until done. This cookie has a light and almost a cake like texture, really good.
