Banana Waffles

I had brought home a few banana on intending to make banana bread. I ended up making banana bars (that will be a later post). So my husband brought home bananas too and wanted them with waffles.

Therefore I give you banana waffles:

1 3/4 cup flour
1 T baking powder
1/4 t salt
1/8 t each cinnamon and nutmeg
2 eggs. yolks and whites separated
1 3/4 cup milk
1/2 cup vegetable oil
1 mashed banana

Combine dry ingredients. Combine egg yolks, milk, and vegetable oil and add to dry ingredients. Whip up the egg whites to stiff peaks. Fold in mashed banana and the egg whites. Bake in waffle iron according to manufactures directions.


**Note** If you want to make easier, you don't have to separate the eggs, just add the eggs whole to the wet ingredients.

However, the secret to light and fluffy waffles is to beat up the egg whites.
