We made this as a side dish, but it could work as an appetizer. It is a twice baked potato with an imitation crab topping. So here is the recipe:
Slice 6 russet potatoes in half lengthwise. Layout on baking sheet, salt and pepper to taste. Bake in 400 degree oven until browned, about 1/2 hour.
For the topping:
8 grams imitation crab
1/2 onion, finely diced
1 oz mozzarella cheese
1 tablespoon basil
1 tablespoon thyme
Mix topping ingredients. Spoon mixture on top of potato wedges. Bake at 400 degrees for 20 minutes. Sprinkle with Parmesan cheese.
