Tasty Eats - Boston Cream Pie and Coconut Macaroons to include my first Food Video

I have another Tasty Eats post. I do enough of these now that I should make a logo.

 I saw a Boston Cream Pie being made on a cooking show and I knew I had to make one. The recipe I found is called Wicked Good Boston Cream Pie, as yes, it was wicked good. The only downside is that the pastry cream oozed out everywhere (ok, may that is really not a downside). Either I had too much or it it did not set up properly.  Overall, it was hot mess, but a delicious hot mess.





Since the pastry cream in the Boston Cream Pie used egg yolks, I had egg whites to use up.
Hence, Coconut Macaroons. Here is a quick recipe:

6 egg whites, beat until fluffy.
Add in 2 cups sugar, 1 teaspoon salt,  and 1 teaspoon vanilla. Beat a little bit more.
Fold in a bag of coconut (3-4 cups) and 1 to 1 1/2 cup of nuts 
 Drop by teaspoons full onto either parchment paper or a silicone baking sheet.
Bake at 325 degrees F for about 18 minutes or until set.

I usually make dinner on Saturday's. Yesterday I had made sloppy joes and caprese pasta salad. I also made Sloppy Joes, which is simple family recipe. It is served with sliced smoked cheddar cheese and topped with French Fried Onions (not just for Green Been Casserole). 


I had used some fresh herbs from our little garden for the pasta salad, which is just a box on our apartment patio with plants, herbs, and a zucchini plant. I used a mix of basil, oregano, and dill.
