Thinking about going with Ubuntu as an operating system. I am concerned about the iTunes thing considering that I have an iTouch and it has a need to sync with iTunes.

It's not a terribly difficult transition, but the iTunes transition can be rough. Though... it looks like it might work using Wine: http://appdb.winehq.org/objectManager.php?sClass=application&iId=1347
