Tasty Eats - Visiting My Childhood Home

In this edition of Tasty Eats, I am going to share what we ate during the week during a visit with my mom in my childhood home.  I have not seen my mom or any of my family in Wisconsin since the pandemic hit. I grew up in northeastern Wisconsin, but I currently live in Lincoln, Nebraska. Both of my  daughters live in Kansas. I have only seen them once since the pandemic. It was me along with my son, my older daughter and her three kids. We made the 10 hour drive and stayed in my childhood home.


The first night my daughter made chicken and dumpling soup in the crock pot.  This turned out really flavorful. I did not get any pictures of our meals for the next three nights. My daughter made tacos. She made up some black beans and rice, which is something I haven't included in my tacos before, but it was tasty. My son made up some burgers one night and I made lasagna the next night after that.

We had bought bagels, Pop Tarts, and cereal for breakfast most of the week. We had also brought up store bought scones and Nutri-grain bars. However, I did cook up some apple pancakes and bacon for breakfast one morning. I had found this recipe in my mom's more-vintage-than-mine Better Homes and Gardens cook book.  The pancakes turned out really good. We had to get creative on the topping because we did not have syrup. We had to use Nutella, peanut butter, and/or whipped cream.



I did make up some sweets. I had made brownies (from a box) and these banana bars. 
 
This next dish has been a staple growing up for as long as I can remember. Unfortunately, it is not a favorite of mine. Hot Beef. It is not that hard to make. I has a chuck roast, an envelope of onion soup mix, a can of gravy, a can of beef broth, and about a teaspoon of Kitchen Bouquet. Let this cook all day in a crock pot, we added a mixture of flour and water at the last few minutes to thicken it up. Also the roast should be ready to shred. We traditionally served it in buns, but we also made mashed potatoes. 

I had my hot beef on top of the potatoes.

I also added cheese curds. It was o.k. But if you like beef roast, you will like this dish.


For the last night visiting with my mom, my daughter had made chicken fingers with the chicken left over from the chicken and dumpling soup. I had brought a bag of Sun Chips with me in hoping it would get used. It got used for the coating of the chicken fingers. 

I took a lot of photos of my grandkids and cloud shots for Skywatch Friday, but I did not take a lot photos of the food we ate. I guess it was better to spend time with my family and not focus too much on the food. My mom has quite a bit of left overs in her freezer to last a while.  It was nice to visit and we had a good time. I am not sure when I will get a chance to visit again.

  2. How nice that you got to do this AND leave your mother with plenty of meals in the freezer. I'm always pleased when I see someone making fluffy dumplings rather than the flat noodley kind.
