Seafood Mac and Cheese


I was inspired to make this after seeing Lobster  Mac and Cheese in the current edition of Food Network Magazine. I used shrimp and imitation crab meat in my version:

Seafood Mac and Cheese Recipe

Ingredients:

  • 1 pound elbow noodles
  • 1 quart whole milk
  • 8 tablespoons butter (divided)
  • 1/4 cup flour
  • 4 cups smoked Gouda cheese (original recipe called for Gruyere)
  • 2 cups cheddar cheese
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 package of imitation crab meat and salad shrimp
  • 1 1/2 cups bread crumbs

Instructions:

  1. Cook the noodles according to the package directions.
  2. Heat the milk, but do not let it boil.
  3. In a large saucepan, melt 6 tablespoons of butter. Add the flour and cook over low heat for two minutes while stirring constantly with a whisk.
  4. While still stirring, add the milk and cook until it thickens (about 1-2 minutes).
  5. Remove from heat and add the cheeses, salt, pepper, and nutmeg. Stir until the cheese melts.
  6. Add the cooked noodles and seafood to the cheese sauce. Place the mixture in a 9x13-inch baking pan (or use 6-8 gratin dishes as per the original recipe).
  7. Melt the remaining butter and mix it with the bread crumbs. Sprinkle this mixture on top of the mac and cheese.
  8. Bake at 375 degrees Fahrenheit for about 30 minutes or until the sauce is bubbly and the top is browned.

Serving Suggestions:

  • Serve your seafood mac and cheese with a side salad or steamed vegetables for a complete meal.
