My son wanted some banana bread, but I did not want to make a whole loaf. So I made a mini loaf of bread. I took and existing recipe and cut the recipe down to fit my mini loaf pan. I took a slice to make sure it was tasty. My son took the remaining loaf and finished it off. Guess he liked it.
Overall I took an existing recipe and used 1/3 of the recipe. Now granted some measurements are difficult to cut into a third. So I did some liberties and I am glad that the recipe did turn out. After all, my son did eat the entire loaf :).
2/3 flour
1/3 cup sugar
3/4 teaspoon baking powder
1/8 teaspoon basking soda
1 mashed banana
1 tablespoon milk
2 tablespoons butter
1 egg
2 tablespoons chopped nuts
Combine dry ingredients. Set aside. Combine, banana, milk, butter, and egg. Add the dry ingredients. Fold in chopped nuts. Put batter in mini loaf pan. Bake at 350 degree F. for about 35 minutes or until done.
Such a good idea, I do the same sometimes although an egg is harder to divide sometimes! I usually do what you did and 'take some liberties' and hope for the best! I love how you say you had a slice just to make sure it was ok, that's just good parenting right?
