Raisin Spice Cookies



My husband hinted that he wanted raisin spice cookies.  I originally did a post seven years ago and posted the recipe. This was a cookie that my mother-in-did and the recipe is written down on a recipe card. I mentioned in the original posted that recipe give the flour portion as 4 cups as 1 1/2 batches. It still fells crazy that the recipe doesn't give the amount as a single batch. So I thought I would figure the weight, so I went with 320 grams.

Making Cookies With My Granddaughter

We usually have grandchildren over after church and usually involves making cookies.

Most of the time it is chocolate chip cookies, however I didn't have chocolate chips. I undead up making sugar chocolate chip cookies. Making Cookies With My grandchildren makes baking that much more enjoyable.

Coffee Cake in Mug

It was one of those mornings that I was in the mood for coffee cake, but I really did not want to make a full pan of coffee cake. With one three of us in the house, I thought it would not all get eaten in a timely manner or I would just eat more than I wanted to.

So it was off to find a recipe on the internet for a coffee cake for one recipe. I was willing to bake it.
So I found a recipe that could be made in the microwave and included all the ingredients I had on hand...or so I thought I had.

I could not find the vanilla I needed. Search everywhere in the kitchen for it, could not find it. I found maple flavoring and used it instead. Good choice, I may continue to use maple favoring for this recipe in the future.

There is no egg in the recipe, I might try substituting egg for some or all of the milk in the future.

Rye Crackers

I had bought rye flour to make rye noodles. So on the back of the bag is a recipe for crackers. So I had to try it out. I also found the recipe online and you can find it here.

Turned out really tasty and I hope not to eat is all in one sitting.

Cookie Dough Dip



I can not take credit for making this dip. This was a sample provided at the gym. Every so often the gym with provide healthy food and recipes. I tried this and it is very good. So not only do I have a recipe to share, but the nutrition facts on this recipe.

The ingredients include:

1/2 cup Smart Balance Light Omega-3 Buttery Spread
8 oz fat free cream cheese
1/4 cup brown sugar
1/3 cup sugar
2 1/2 t vanilla
1/2 tsp salt
 1 1/2 cup semi-sweet chocolate chips

Cream the buttery spread, cream cheese, and sugars Mix the remaining ingredients. Use as a dip with Pretzel Chips.

Nutritional Facts.
Serving size is 6 pretzel chips
Calories: 200
Total fat: 7g
Cholesterol: 1mg
Sodium: 351mg
Total car: 30g
Sugar: 20g
Protein: 3g


So overall, this recipe is low in fat, but not necessarily low in sugar. I will however consider this recipe in the future is I need to make a dish for an event.

Pasta night



Last week it was pasta night, not just for the main course, but for dessert too. The top photo is chocolate pasta. The photo below is rye noodles.



With the chocolate noodles, it was severed with vanilla ice cream and a strawberry balsamic sauce that my husband made.


With the rye noodles I made a Rueben casserole.

Oatmeal Coconut Chocolate Chip Cookies


I have a recipe box that I inherited from my mother-in-law. I knew that there was a recipe for sugar free cookies, but I could not find that recipe. I did stumble upon a oatmeal coconut cookie recipe and since I had coconut to use up, I used that recipe. I did add chocolate chips and reduced the flour , which I should not have. The cookies ended up a little flat.

But they were delicious.

Chili and Cinnamon Rolls

I would of never of paired chili and cinnamon rolls together, but I guess it is a thing in at least Nebraska.


It started out I wanted to make something in a crock pot and I thought of chili. I don't make chili that often and was surprised to come across beer in the recipe. I am glad we had some in the fridge, because I was not going to buy a six pack of beer for just using a bottle. I guess I could of, my husband would of drank the beer.

Then while making the chili I remember that my husband likes to have cinnamon rolls with his chili. I did not want to go back to the store to buy cinnamon rolls nor did I want to make a large batch of rolls and spend hours making them. What are the odds that I not only find a small batch cinnamon rolls recipe, but it is made in about an hour too. I found it here.

So going back to the pairing of these two items, I guess the two used to paired as part of a school lunch.

Strawberry Mint Lemonades


My son made up some strawberry mint lemonade. He added some sliced strawberries and mint leaves to ordinary lemonade. Just let the lemonade sit for a while so the flavors can come through.

Have It Your Way

I saw the variety of sandwiches at Burger King that had sourdough bread, so I asked if I could have sourdough bread on the Big Fish sandwich.  The manager also recommended using the mozzarella from their chicken parmesan sandwich to their burgers.

Impossible Cake



I had come across this Impossible Cake recipe on the internet. Being that today is Cinco de Mayo, I was looking for Mexican recipes. I guess my sweet tooth in me made me notice this recipe. What makes it interesting is that the chocolate cake batter is poured in first and then the flan is poured on top. As it bakes, the flan settles to the bottom of the pan.  I liked how it turned out, my husband likes it, but my son did not like the texture of the flan.

Mexican Macaroni Medley



I was looking for a quick recipe for Sunday dinner. I owned a Pampered Chef cookbook so I browsed through it and found the Mexican Macaroni Medley. I followed the recipe except I left out the green chilies and added ground beef flavored with a little taco seasoning. My husband wanted me to leave out the green chilies. This was also going to be a main dish so I thought it needed some protein. I also did not have the chili flavored Fritos on hand so I used normal Fritos. This dish was a big hit, so it will be made again in the future.

Sky Watch


I had just finished a wonderful cruise in the Caribbean and a few days in Fort Lauderdale. It was full of gorgeous scenery, fun activities, and delicious food. I have many pictures to share with Skywatch Friday for a while.

The first photo was taken in Fort Lauderdale, during a water taxi tour. We had learned that many of the million dollar homes and yachts are owned by business wealth and not anyone from the entertainment industry. I guess they hang out in Miami. The second photo was taken during an Everglades tour. It was the first time I got to ride in an airboat.

Fresh Orange Juice

When visiting my mom over the holidays, I had come across a vintage orange juicer.

I had found that it fits nicely over my 2cup glass measuring cup. Two oranges made a little more than a 1/2 cup.
