Chocolate Malt-O-Meal Brownies

If you’ve ever purchased a box of Chocolate Malt-O-Meal, chances are you’ve come across the Fudgy Chocolate Chip Brownie recipe printed on the box. However, my initial attempt at making these brownies left me unimpressed. Perhaps it was because I omitted the chocolate chips the first time around. But this time, armed with a substitution, I decided to give it another shot.

Instead of using baking chocolate, I opted for 1/3 cup of baking cocoa, which happened to be readily available in my pantry. You see, I almost always have baking cocoa on hand, but the bars of baking chocolate are a rarity in my kitchen.

To my delight, this batch turned out much better. The brownies were fudgy and delicious—a marked improvement from my previous experience. Here’s the recipe, which you can find on the Malt-O-Meal website or right on the box:

Ingredients

  • ½ cup butter or margarine
  • 1 sq. (1-oz.) semi-sweet baking chocolate ( I used 1/3 cup baking cocoa)
  • 1 cup sugar
  • ½ cup all-purpose flour
  • ½ cup CHOCOLATE MALT-O-MEAL®, dry
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips

Directions

Heat oven to 350°F. In a 2-quart saucepan, melt butter and chocolate over medium heat. Add remaining ingredients; mix well. Pour into a 9-inch square pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely; cut into bars. Brownies can be frozen and eaten directly from freezer. Yield: 18 brownies.

    1. I used to make this for my 95 year old home health client until his passing. I left my recipe at his home and now I can't seem to pull it up on the web or anywhere. I have a 95 year old home health couple now that I would like to make these for. If you could possibly post the recipe or even take a picture of the recipe on the box and post it I would greatly appreciate it. Thank you
