This week I am sharing another recipe my darling husband has come up with. We had this the other night with macaroni and cheese.
Chicken salad deluxe

5 large chicken breasts or thighs
1 apple peeled and diced
7 grapes diced
2 carrots peeled and diced
2 celery stalks diced
6 mushrooms diced
1 small green pepper diced
1/4 cup toasted sesame seed
Green spinach leaves
4 hoagie buns
1 cup mayo
1/4 cup sour cream
salt and pepper to taste
Boil chicken in stock pot with salt and pepper for seasoning. When chicken is done remove from stock and cool. save the stock for another recipe. In a large mixing bowl combine; apple, grapes, carrots, celery, pepper, mushrooms, sesame seeds, mayo, and sour cream. When chicken is cooled pull meat off bones and shred, add to veggie mixture. Mix well.
serving: Slice hoagie bun and toast bread, place handful of spinach on bottom of bun, add chicken salad, and serve cold.
