Strawberry And Coconut Cream Pie

As mentioned in my previous post, my husband was going to create a pie using some of the coconut we got from our son. 
So he made strawberry coconut cream pie. He used a pre-made chocolate graham cracker crust, instant pudding with the coconut mixed in,  strawberry jello will whipped topping folded in topped with toasted coconut.

So here is the recipe.
1 small box coconut cream instant pudding mix
1 small box vanilla instant pudding mix
1 1/2 cup milk
1 chocolate graham cracker pie crust
1 small box strawberry jello
1 12 oz. cool whip
1 1/2 cup coconut
Preheat oven to 250 degrees and toast 1/2 cup coconut for 10 minutes remove from oven and let cool. In a mixing bowl add 1 1/2 cup milk with both pudding mixes and mix until it starts to stiffen, then add in rest of coconut and fold in. Place mixture in pie shell and refrigerate for 30 minutes to set.
Place cool whip in mixing bowl and add jello packet and stir well. Place on top of pie. and spread to all corners evenly. Sprinkle toasted coconut on top of cool whip and refrigerate until serving.

Macaroni and Cheese With Macaroons

 My son wanted to learn to cook macaroni and cheese. Some advice he got from his co-workers at work is to add bacon and corn. He also added smoked Gouda and cheddar. The dish did turn out tasty, but not creamy.  He had a layer of cream and flour mixture, a layer of noodles, a layer of corn, bacon, and cheese, then topped with panko and more cheese. He should of made a rue with the flour,cream, and cheese. If you do already have a favorite recipe, do consider adding corn and bacon. A while back I made Creamed Corn Macaroni And Cheese. Maybe next time my son wants to make macaroni and cheese, we will work with this recipe.
This may look like burnt bacon, but this how my husband loves it.

To move on to the macaroons,  I have a step son who brought us bags of sweetened coconut from his place of work (Red Robin.....Yum!), So my husband made up some coconut macaroons. We still have plenty of coconut left. I plan on making some After School Bars, and my husband is planning a new pie recipe. So keep and eye out for that

Bratwurst Hash

This is a creative and simple dish, but I had a confession to make. I ate my dish with ketchup. I can't help it, I am a ketchup junkie. I picked out the potatoes and bratwurst and dipped it in ketchup.

It is, however, delicious on its own.

Bratwurst Hash

2 bratwurst (sliced)
1 onion (diced)
3 Russet potatoes (cubed)
2 tablespoons olive oil
3 tablespoons Italian seasoning
4 oz. shredded cheddar cheese
Salt and pepper to taste

In a skillet heat oil and sweat the onions, add potatoes and bratwurst. Stir occasionally until potatoes are cooked. add seasoning and stir well, add cheese and mix well. Serve Hot

Bacon Ranch Chicken And Pasta

 Ranch and chicken always goes well together, this dish is cheesy too.

Bacon Ranch Chicken And Pasta

1 lb. bacon (cooked crisp and crumbled)
1 lb. Rotini noodles (cooked)
2 can Campbell's cheddar cheese sauce 
1/2 cup ranch dressing
2 cups mixed vegetables (frozen)
3 boneless chicken breasts (cooked and diced)
Salt and pepper
3 teaspoons garlic powder
3 tablespoons oregano
1 cup Panko breading
1 cup shredded cheddar cheese

Cook bacon, chicken, and noodles. Place all ingredients in large mixing bowl and mix well. Place mixture in large casserole dish and top with the Panko and cheese. Bake covered @ 375 degrees for 30-35 minutes. Let stand 5 minutes before serving.

Bratwurst Pasta Salad

I found this recipe in one of my vintage cookbooks. It looked good so I had to try it.

So to make it gather:
4 ounces of pasta of your choice (I used shell pasta)
10 ounces of fresh or frozen broccoli
12 ounces fully cooked smoked sliced bratwurst
2 small diced tomatoes
4 sliced green onions
1 t Italian seasoning
1/2 cup Creamy Italian Dressing

Cook your pasta according to package direction, rinse in cold water and drain well.
If using fresh broccoli, cut into one inch pieces and boil in salted water for about 7-9 minutes. If using frozen broccoli cook according to manufactures directions.
Combine all ingredients and chill for at least 4 hours before serving.

If desired, served over lettuce and top with Parmesan cheese.

Tasty Breakfast Eats

I had a mission this weekend to use up the buttermilk my husband bought to make the chicken fried steak. So I made coffee cake, cookies, and a double batch of waffles to finish up the buttermilk.

Some Tasty Eats

 One of my husbands favorite meals is chicken fried steak.  I have not tried it before, so he make some up for dinner one night. It was really good.

Last week I did a post on Making Frozen Flat Bread Pizzas.   We finally had a chance to cook one up and it was delicious. I really liked the light texture of the flat bread.

Finally I made up some buttermilk cookies. There was buttermilk left over from making the chicken fried steak, so I found a recipe in my cookie cook book. My grand daughter was over to visit, so we made them together. It was her idea to add sprinkles and a smiley face.

Making Frozen Flat Bread Pizza

A fundraising idea that had come to mind at our church is to make flat bread pizzas. So I was thinking that we could try it out.

It it took was adding pizza sauce, cheese, and toppings (pepperoni in our case) to flat bread. So far all we did was wrap them in plastic wrap and freeze them. We have not tried baking them yet. When it comes time to bake them, I would bake them at about 400 degree oven for 12 minutes or until the cheese was golden brown.
