Strawberry Applesauce Cookies

 Looking through my vintage cookie book and found an applesauce cookie recipe. I had individual snack cups of strawberry apple sauce, so I made a few changes to the recipe to make Strawberry Applesauce Cookies. The original recipe had spices like cinnamon. nutmeg, and cloves. It also called for cold coffee. I left these ingredients out as I thought it might interfere with the strawberry flavor.

So here is my recipe:

1/2 cup shortening
1 cup sugar
1 eggs
1/4 cup milk
1 cup Strawberry Applesauce (two 4 ounce snack cups)
1 teaspoon vanilla
1 3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins

Mix butter, sugar, eggs, applesauce, milk, and vanilla. Add the dry ingredients.  Chill dough for at least 2 hours. Drop by teaspoon about 1 inch apart on greased cookie sheet.Bake at 400 degrees for about 8 minutes or until done.This cookie has a light and almost a cake like texture, really good.

Tater-Topped Fish Bake

Here is another Pampered Chef recipe, Tater Topped Fish Bake.  The recipe calls for Orange Roughy as the fish. The local grocery store did not have any, the guy behind the fish counter said they have not had any for 6 years. I guess this fish was exploited and over-fished.  So I ended up going with a different fish. I ended up using Swai.

So how did this recipe turn out. It was good. It had a crunch on top with the tater tots and cheese, with creamy fish and vegetables.  I would make this again. We are in the Lenten Season, which means more fish dishes in the next few weeks.

Taco Cake (a.k.a. Tamale Round-About)

When my son first saw this, he called it taco cake. So I thought I would call it that. It is more of a taco corn bread.

I am not going to lie, this recipe is in a Pampered Chef Cookbook. I haven't tried too many recipes from my Pampered chef cook book, but I knew I had to try the Tamale Round-About.
This Mexican based recipe is as good as the other famous Pampered Chef recipe, Taco Ring.

I made this is my bundt pan. It is essentially corn bread with meat in the middle. My husband absolutely loved this.

It is Valentine's Day, so this dish could work out if you have a heart shaped baking dish...maybe..I don't own one, so I could not tell you for sure.

Mashed Potato Bites

 I up these mash potato bites for the Super Bowl, along with some chicken legs. I saw a recipe on Pinterest and I knew I had to try to make them.

1. I made mashed potatoes for scratch. I added butter, milk, sour cream, cheddar cheese, seasonings, and bacon left over from the mornings breakfast.

2.Once the potatoes were cool, I formed them into balls, coated them in egg, crushed corn flakes, and again in egg and corn flakes.

3. I let the set in the refrigerator for a few hours. They need to set for at least 30 minutes.

4. I fried them up in my deep fryer for a few minutes, until it is golden brown.

So pretty much, my entire day went into making these mashed potato balls. Well worth it.
