Oatmeal Apple Butter Cookies

I started out using the Basic Oatmeal Cookie. I substituted 1/2 of the butter with the apple butter. This cookie also has oatmeal, nuts, and raisins,which could make it a little on the healthy side. 



So here is the recipe for these tasty cookies:

1/2 cup butter
1/2 cup apple butter
1 cup sugar
1 cup brown sugar
2 eggs
1 t vanilla
1 1/2 cups flour
1 t baking soda
1 t salt
3 cups oatmeal
1 cup nuts 
1 cup raisins 

Combine butter, apple butter, sugar, and brown sugar until creamy. Add the eggs and vanilla. Combine flour, baking soda, and salt and add to the butter mixture. Add remaining ingredients
Roll into 1 tablespoon size balls  place 2 inches apart on greased baking sheet. Bake 8-10 minutes or until done.

Apple Butter Snickerdoodles

I had some apple butter I wanted to use up, and I wanted to make cookies. So I found this recipe for Apple Butter Snickerdoodles



This cookie has a nice apple and cinnamon flavor. Because it has a cinnamon sugar coating on the outside,
it has a slight crunch. I made this for my husband, who is in a nursing facility recovering from a back injury he got in early December. I hope he likes them.

Peanut Butter Raisin Cookies

It was time again to make cookies for fellowship for our church, I like making making cookies for myself and others.

So went to Pinterest to look for a Raisin Bran cookie, I had two boxes of the cereal and wanted to use some of it up. What I found is Peanut Butter Raisin Bran Cookies. Yum! This is definitely something I would make again.


I also made up my Birthday Cookies ( because it was my birthday this past Tuesday), which was also a hit.

Birthday Cookies

Happy Birthday to ME! I have been holding at 39 for 10 years.

So instead of cake I decided to do cookies


So to make these cookies, I added a stick of butter and 2 eggs to a box of cake mix. Baked them for 8-10 minutes is 350 degree oven.  I frosted them once the cookies were cool. Of course, I had to add sprinkles. I made these this past Saturday and served them at fellowship at church on Sunday.

So this is a my Wordless Wednesday Birthday Party!

Chocolate Malt-O-Meal Brownies

Anyone who have bought a box of Chocolate Malt-O-Meal has seen the Fudgy Chocolate Chip Brownie recipe on the box. I was not impressed on how these brownies turned out when I first made them many years ago. To be fair, at the time I made them without the chocolate chips. This time around I substituted the baking chocolate with 1/3 cup of baking cocoa, because it is what I had on hand. I almost always have baking cocoa on hand, and rarely have the bars of baking chocolate.
This time, I am happy with the results. For some reason my brownies did not turn out all that fudgy the first time I made them years ago, this time I was not disappointed. They turned out as delicious as any other fudge brownie recipe.

Ingredients

  • ½ cup butter or margarine
  • 1 sq. (1-oz.) semi-sweet baking chocolate
  • 1 cup sugar
  • ½ cup all-purpose flour
  • ½ cup CHOCOLATE MALT-O-MEAL®, dry
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips

Directions

Heat oven to 350°F. In a 2-quart saucepan, melt butter and chocolate over medium heat. Add remaining ingredients; mix well. Pour into a 9-inch square pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely; cut into bars. Brownies can be frozen and eaten directly from freezer. Yield: 18 brownies.

Baked Donuts

I knew I had to make these when I saw them posted on Facebook.  Baked Buttermilk Donuts.
So as you can see from the picture, I have three different size donuts. My issue with the doughnut pan is my donuts stick to them even when I do spray the pan. That is why I rarely make baked donuts is because I had issues with them sticking to the pan. My husband asked if I seasoned my pans. I asked him how I would do that, he said to spay them and put them in a 350 degree oven for about 15 minutes. I will have to try that to see if it works.

As far as the donuts, I did not have buttermilk. So I added vinegar to the milk to make it curdle. Next time I will have to try this recipe with actual buttermilk. I also added cinnamon to it also. My son thought it was just o.k.,  I liked them, and my husband loved them.

Home Made Noodles And Sauce

Nothing like home made noodles and sauce. I have been making home made noodles for years, but still have not perfected a sauce. The sauce did not turn out as expected, but still delicious.

Changing the subject, I have three scarves I am working on. One of them is a knitted drop stitch scarf.
I have a bulky purple and white crocheted scarf that is almost done, and a knitted scarf using three different bulky yarns I got for Christmas.
