Surgery

On my Treasures Made From Yarn blog I did post on my hospital trip and my husband needing surgery on his foot. So his surgery went well but he is still sore. So this means I get to do most of the cooking for a while.

So I knew I wanted to make chicken legs, and I found this great recipe on the web for Caramelized Chicken Legs, it turned out really well, you can find the recipe here


I also made up cookies that he would like, I found a Hermits cookie in my Betty Crocker Cookie Book. It has the cinnamon/ nutmeg flavor along with nuts and raisins, he loved them.

Yeast Free Cinnamon Rolls



There are many mornings I wake up wanting home made cinnamon rolls, but making them from scratch can take hours when using yeast. I usually don't have the time, nor do I want to wait that long for cinnamon rolls.  So I searched my cook book and found a nutty stick roll recipe that could be adapted for cinnamon rolls. So here it is:

2 cups of flour
2 t baking powder
1/4 t salt
1/3 cup butter
3/4 cup milk

Combine flour, baking powder, and salt.  With a pastry blender or a fork, cut in the flour until it resembles crumbs. Make a well and stir in the milk. Stir just until dough holds together.  On a lightly floured surface, knead dough about 20 times. roll out into a rectangle of about 12 x 10 inches. Spread about 2 T of melted or soft butter onto the dough.  Mix about 1/4 cup of sugar and 1/2 t cinnamon. Sprinkle cinnamon sugar mixture on top of the buttered dough.  Roll up along the long side and pinch edges to seal. Cut into about 1 inch pieces.  Or you can do what I do, cut roll in half, cut each of the two pieces in half, and then cut each piece evenly in three pieces. You get 12 rolls.  Place rolls in 9 x 9 inch greased pan (or any pan you have that would fit 12 rolls nicely)  Bake in 425 degree oven for about 25 minutes or until golden brown.

While the rolls are baking you can make some Powdered Sugar Glaze, because cinnamon rolls are not cinnamon rolls until you add the sweet frosting. Mix about 1/2 cup powdered sugar, and 1/2 t vanilla extract. Mix in enough milk until you the desired consistency.

When the rolls come out of the oven, spread on the glaze. Enjoy!

Peach Failure

I have seen a carrot and peach smoothie on the web. I did my version with skim milk, frozen peaches, fresh carrots, brown sugar, vanilla, and cinnamon. It was just ok. It is something I won't make again.



Now the peach cookies was not bad at all, I thought it was quite tasty. It did not seem to go well with anyone else. The recipe can be found here.

Carrot Cake Sandwich Cookie

I knew once I saw these here, I had to make them.

Looking over the ingredients, it appears to be lower in fat. Not as much butter or eggs. It is loaded with carrot.  It did turn out really good. If I make it again I have to make the cookies smaller. I only got 9 cookies out of the batch. and they are big as a sandwich cookie.

Banana Bars

The recipe for this is found in The Betty Crocker's Cookie Book that was first published in 1963. My parents have a copy of the original book, I think as a wedding gift. A reproduction was printed in 2002 and I got me a copy of the reproduction.

The recipe for the banana bars is found in the section of the book for bland diets. When I make these bars I add nuts and frost them.
I usually make these from time to time and is delicious.

However next time I might try the recipe Betty Crocker current has on the web. It is a banana bar recipe with cream cheese frosting. This recipe uses less flour, changes the leavening proportions, and adds cinnamon.
