Show Your Stuff #113 - Hot Chocolate Mix

Hi,
Welcome back to another edition of Show Your Stuff. This week I made up some Hot Cocoa Mix.   I have made DIY got cocoa mix before. Here is a recipe I found on the back of a bag Mountain Maid instant dry milk.

2 cups dry milk
1/2 cup unsweetened cocoa
1 cup sugar
1/4 t salt

Mix all ingredients and store in airtight container.

To make a cup of cocoa, mix 1/4 of mix with 1 cup of boiling water.

I made some no sew hats for the grand kids one day while they where visiting. I had bought some of the Dallas Cowboy fleece Hobby Lobby had  in the clearance section knowing that their dad is a Cowboys fan.

I was going off the directions found here to make the hat.

Home Made Velveeta - Show Your Stuff #112

Hi,

Welcome back to another edition of Show Your Stuff! I am amazed at what I find here each week. 

I wanted to try to make home made when my husband told me he has seen it on The Chew. So I searched the web and found this recipe on Food.com.

 To me, it tastes like whatever cheese you use. In my case I used mild cheddar and it tasted like mild cheddar. I still have not decided if I am going to do this recipe again. you had to blend in three batches and I felt like it was a messy process.

The upside is you know what goes into this compared to the store bought version. It only has water, powdered milk, gelatin, and cheddar cheese. I plan on making this in macaroni and cheese and grilled cheese sandwiches.

Food Trip Friday

It was my birthday and I got to choose where I wanted to go to eat. The place I chose was The Parthenon.
Usually I like Italian food, but I this place serves Greek food. My husband first introduced me to this place, as he knows the owners and their parents.  It is always a treat to eat here, because it is not like any other place in town. The food and the service is exceptional.
We had the crab cakes as an appetizer, best ever! light and tasty.


Combination platter, the stuffed grape leaves was delicious!

Pumpkin risotto, nice and creamy

We tried kale for the first time, we did find it bitter, but I added some lemon juice and it took some of the bitterness away

This is a mouse on top, so cute!

Chocolate cover baklava, need I say more.

Show Your Stuff #111 - Greek Potatoes

Welcome to another edition of Show Your  Stuff

This week I have three recipes to share. I just asked my husband for a recipe for Greek Potatoes. he gave recipes for everything we had for dinner tonight.

Greek Potatoes

4 Russet potatoes peeled and quartered lengthwise
Olive oil
salt and pepper
2 lemons
2 tablespoons mint leaves chopped
2 Tablespoons oregano

Preheat oven to 400. In 2 qt. casserole dish sprinkle olive oil on dish, layer potatoes in dish, sprinkle with olive oil, sprinkle seasonings evenly over potatoes, squeeze lemon juice over potatoes, place lemon halves on top of potatoes, cover and bake 30 minutes, remove foil and bake additional 15 minutes.  Serves 4

Garden Chicken Flat bread
4 pieces of flat bread
2 4 oz chicken breasts
Ranch dressing
1 cucumber diced
1 tomato diced
1 red onion Diced
6 oz. Mozzarella cheese

heat oven to 375, Place flat bread on cookie sheet, Spread on ranch dressing evenly to taste, add vegetables. Pan sear chicken till done seasoning with salt and pepper as needed. Cut chicken into small strips and place on bread. Cover with cheese, bake 15 minutes, serves 4

Lobster Salad
8 oz package imitation lobster meat
2 oz cranberries
2 oz toasted walnuts
1 cucumber sliced
1 tomato wedged
1 red onion sliced
2 oz croutons
8 oz. Salad mix

In large mixing bowl combine and toss all ingredients, serve with favorite dressing. Serves 4.

Show Your Stuff #110

Hi,
And welcome back to another edition of Show Your Stuff. This week I cleaned out the fridge and used up some remaining sweetened condense milk and make up some After School Bars.

I did not have all the ingredients, so I improvised. I did not have butterscotch chips and I chopped up some coconut cookies.

Still turned out tasty, I just wish I had the butterscotch chips.

Oatmeal Peanut Butter Waffles For One

I do like waffles. I had an opportunity to vary from the tradition waffle and try something different. I looked through Pinterest and found this recipe, and since it was recipe for one, it was perfect. It is a gluten free recipe, but that did not matter to me.

Though I did make some variations to this recipe.  One variation I did do on purpose. I added an egg and reduced the water. one of the things I look to do to my waffles is beat up the egg whites and fold them in, it make for a lighter and crispier waffle. One was a complete accident as I misread the recipe. I did 2T of peanut butter instead of peanut flour. I was an honest mistake as I was searching for a peanut butter waffle recipe. And, or course, I did not notice my error until after I put the batter in the waffle iron, so I was concerned on how it was going to turn out.

I was not disappointed. It was delicious.  This will become a regular recipe if I just was to make waffles for me.  I loved the peanut butter flavor. It was a little denser and filling than the basic waffle recipe, but overall I am thinking that this recipe healthier and gluten free.

So here is the recipe for these tasty waffles:

1/2 cup quick oats
2 T peanut butter
1 T brown sugar
1/4 t baking powder
1/8 t salt
1/8 t cinnamon
3 T water
1 egg yolk
1 egg white.

Mix all ingredients except the egg white, beat up egg white and fold in.
bake in waffle iron until done.

An easier version would be just to add the egg to the other ingredients.

Show Your Stuff #109 - BBQ Spare Ribs


Hope everyone had a Happy New Year, on New Years Day made up some BBQ spare ribs in a slow cooker. It was so tender I had a hard time taking it out of the crock pot, and it was tasty too.

So here is the recipe:

2 lbs Spare Ribs
1 bottle of your favorite BBQ sauce
1/8 cup onion power
1/8 cup Garlic Powder
Seasoning salt

Liberally coat ribs with seasoning salt, add to 10 quart crock pot and remaining ingredients plus enough water to fill the BBQ sauce bottle. Cook on high for 2 hours and then on low for 3 hour or until done.
