Mexican Stroganoff from Campbell's Soup

For dinner tonight I searched the web and found this Mexican Stroganoff recipe on Campbell's web site. You know it was good when people go back for seconds. I did make a few alterations to the recipe.

I used my husbands home made salsa instead of the Picante sauce.

I did not have egg noodles, I had rotini noodles and used those instead.

 Instead of serving the beef mixture over the noodles, I just mixed it in with the pack of rotini noodles.


This is definitely on the make again list.

Show Your Stuff #108


Hope everyone had a Happy Christmas. Today I am showing off what we had for breakfast.  It is a family tradition to have an elaborate breakfast before opening presents. We had French toast with cream cheese filling and fruit topping. My husband had made this, he used French bread for the toast. The cream cheese filling incorporates a  package of cream cheese and a container of Cool Whip. The fruit topping is just a bag of mixed fruit with 1 cup of sugar. He served this breakfast with bacon, sausage, and scrambled eggs.

Peppermint Fudge - Show Your Stuff #107


It is time again for another edition of Show Your Stuff. My husband did a lot of holiday baking. He made rum balls, chocolate covered peanuts, coconut macaroons, and peppermint fudge.  Today I am sharing the recipe for Peppermint fudge.

2 cups sugar
1/2 cup butter
1-5 ounce can evaporated milk
1 - 7 ounce jar marshmallow cream
 8 ounces of vanilla chips
1/2 cup crushed peppermint candy
red food coloring

Line 9 inch square pan with foil coated in butter. In a saucepan combine the sugar, butter, and milk, bring to a boil and boil for 5 minute siring constantly. Remove from heat and add the marshmallow creme and the vanilla chips. Fold in the crushed candy. Add to the foiled pan, swirl in the red food coloring. Refrigerate until firm. Cut into squares, it is best to keep refrigerated.

Chocolate, Raisin, and Nut Cookies - Show Your Stuff #106


I was going to make chocolate chip cookies when my husband told me to make  Raisin Spice Cookies. I wanted my chocolate fix, so I made these cookies:

Chocolate, Raisin, and Nut Cookies

2 cups of sugar
1 cup of shortening (I use 1/2 butter and 1/2 cup shortening)
1 t vanilla
2 eggs
2 Cups Flour
1 t baking soda
1 cup raisins
1 cup chocolate chips
1 cup chopped nuts
1/4 cup dry milk (this ingredient is optional, it supposedly enhances the flavors)


Cream the shortening, sugar, eggs, and vanilla. Then I add the dry ingredients, adding the raisins, chocolate chips, and nuts last.
Drop by teaspoonfuls on a greased cookie sheet, bake for 8 -10 minute in a 350 degree oven.

Streusel Waffles

I wanted coffee cake, my husband wanted waffles. So for breakfast I added a streusel topping to my waffles. It turned out ok, it gave it a slightly crunchy texture.

Show Your Stuff #105

It is time again for another edition of Show Your Stuff. I purposely went shopping on Black Friday to get a discount on yarn, and I did got some Christmas Shopping done too. I got some Pom-Pom yarn and made up my Pom-Pom Scarf. I am sure it could end up as someone's gift, or I might keep it for myself.
