Crab Stuffed Mushrooms


Crab stuffed mushrooms
6 large Portabello mushrooms
4 oz crab meat (shredded)
1 tablespoon olive oil
1 tablespoon Mrs. Dash
Pepper to taste
3 oz. Monterrey jack cheese shredded
1 finely diced tomato

Spoon out the insides of the mushrooms; place the outer shells in a 9x9 baking dish, dice the insides of the mushrooms and place in mixing bowl. Add all other ingredients except cheese. Mix well and spoon back into mushroom shells. Cover with cheese and bake 350 degrees for 20 minutes.

Show Your Stuff #91

It is time again for another edition of Show Your Stuff. Yesterday my husband made a delicious seafood dinner. I already have his crab slaw recipe posted, soon I will have his crab stuffed mushrooms up. Today I am sharing the dessert he made, Raspberry Chocolate Puff Pastry.


Raspberry Chocolate Puff Pastry 
1 pint raspberries (cleaned)
6 oz baking chocolate
1 teaspoon corn starch
2 frozen puff pastry sheets (defrosted)

Mix cornstarch, chocolate, and corn starch in food processor until course. Refrigerate mix for 1 hour. Place pastry sheet on clean dry surface and spread 1/2 of mix on sheet. Roll sheet from both ends until you meet in the middle. Repeat for second sheet. Place rolled sheets into freezer for 30 minutes (stiff but not frozen) use a sharp knife and cut into 1/2 inch pieces and place on cookie sheet. Bake 325 degrees for 30 minutes. Do not open the oven door during the cooking process, as the it might fall. Remove and let cool. Add favorite frosting of choice.

Crab Slaw


This tasty crab slaw recipe was part of meal my husband made. This tangy recipe is an alternate side dish for your main meals.

So here is the recipe for Crab Slaw.





Crab slaw
8 oz. crab meat (cubed)
4 oz. shredded Cole slaw mix
4 oz. baby bella mushrooms (sliced)
1 teaspoon garlic
1 teaspoon onion powder
salt and pepper to taste
1/2 cup creamy Italian dressing

Mix all ingredients in bowl. Refrigerate for 1 hour before serving.

Show Your Stuff #90

Welcome back to another edition of Show Your Stuff. This week I made a very simple cookie covered in corn flakes. It is only a few ingredients. This is similar to the Never Fail Cookies I did a while ago. So the recipe is:

1/2 cup butter
1 cup sugar
1 egg
1/2 t vanilla
1 cup flour
about 1 cup crushed corn flakes

Combine butter, sugar, egg, and vanilla, add in the flour.

Scoop out about a 1 inch size ball, roll in the corn flakes. Place on cookie sheet about 2 inches apart, flatten the cookie down about half way, I used the bottom of a glass. Bake in 350 degree oven for about 8 minutes, or until set

You don't want to over bake or flatten the cookie too much as it will get hard....unless you want it that way.

If you want you could try using crushed nuts instead of corn flakes.

Fresh Tomatoes

I was offered some fresh garden tomatoes from my boss today. So I decided to make a fresh pasta dish with them. It has:

Fresh tomatoes 
Onions
Mushrooms
Peppers

Along with ground turkey, spices, butter, red wine vinegar, cheese, and elbow noodles. 

Of course I winged it putting it together, and did turn out tasty.

Stuffed Chicken - Show Your Stuff #89


Welcome back to another edition of Show Your Stuff. So about a week ago I looking for new ideas on how to make up chicken breast. So I looked in the latest issue of Food Network Magazine, it had an insert booklet on 50 ways to cook chicken. I did find a recipe for stuffed chicken. I did not have all the ingredients on hand to make it, but  I did create my own version.

You will need:

4 boneless chicken breasts
about 4 slices of deli ham
about 1 cup  shredded cheese (your choice)

Chop up the ham and combine with the shredded cheese. Slice open a pocket on the side of the chicken breast, a 1/4 of the cheese mixture into the breast, repeat with the remaining chicken breast. Saute the chicken in about 1 T oil until done, about 12 minutes.

Taco Mac - Show Your Stuff #88




Where did the week go? It is time to party again. My husband usually does the cooking, but now he is volunteering to coach youth football, I find myself doing the cooking. This week I made a taco mac. I found variations on the web, but I had to make something with the ingredients I had on hand.

Ingredients:
 1 package whole wheat pasta of choice
1 pound ground beef
1 medium onion, diced
1 packet taco seasoning

1 Large can tomato soup

Cook pasta according to package directions. Saute the onion and add ground beef. Once you brown the ground beef, add the taco seasoning and tomato soup. Stir in the cooked pasta.

Canned Peaches - Show Your Stuff #87

Oh Boy! I LOVE peaches. When my husband made up the canned peaches, I am in heaven. He found a recipe at Food.com and it is the Canned Peaches Amaretto. He did leave out the Amaretto, but still very delicious. He also made up some canned cucumbers. These are sweet, good, but I prefer to have dill pickles.
