Tasty Desserts

 I am sharing some tasty desserts that we did recently. I did the Stir-N-Drop cookies again, except this time I added Kraft Caramel Bits.
My husband had a chicken baking in the oven, so I used the top rack to make cookies. Baking for only eight minutes resulted in a slightly undercooked and gooey cooky (o.k. not necessarily a bad thing, gooey = still good). I had to cook them a little longer with the chicken in the oven.

I also had my husband make a dessert quesadilla, it is the similar to the Pear and Banana Quesadillas,
 except he just used apples. I was glad that I was home this time to enjoy them.

Spicy Buffalo Wings

My husband make the best tasting spicy buffalo sauce.  It is always a treat when he makes them because he can't eat them. He made them recently when my daughter's came to visit last week.

The recipe?

Sorry, he is not sharing at the moment. It is his secret recipe. I know what goes in the sauces, but don't know the portions and I am respecting his wishes to keep it a secret.

Maybe someday he will share the recipe.

Pear and Banana Quesadilla

My husband was inspired to make this after watching Paul Deal make a dessert quesadilla on Food Network. I unfortunately missed out on dessert as I was at work when he made them. I was told that it was good and that everyone else devoured them. I hope he makes them again and hopefully I will be home to enjoy them.

So here is the recipe:

5 Pears
1 cup water
2 cups sugar
3 bananas, sliced
1/2 cup brown Sugar
4 flour tortillas

Topping favorites-caramel sauce,chocolate sauce, ice cream, ect.

Peel, Cut and dice pears, cook in water and sugar until soft. Drain and cool.
Add bananas, pears, and brown sugar to sauce pan and caramelize sugar over medium heat.

Place flour tortilla on flat grill (or skillet) put a quarter of the pear mixture on tortilla, fold it half and brown on both sides. Repeat with the remaining tortillas

Cut and serve with your favorite toppings.

Lasagna


I made lasagna Saturday. It is one of my favorite recipes to make. I would not say that it is an award winning recipe, but no one ever has any complaints about the lasagna.

I used 9 lasagna noodles
1 pound ground beef (you could use Italian sausage if you like)
I jar of your favorite spaghetti sauce.
15 oz container of ricotta cheese
1 egg
1/4 cup Parmesan cheese
1 cup mozzarella cheese
Boil noodles according to package directions. Drain
 Meanwhile brown the ground beef, add jar of spaghetti sauce.

Combine ricotta cheese, egg, and Parmesan cheese



Put a small amount of sauce in the bottom of 9x13 pan and layer 3 noodles
Add one half of the ricotta mixture
Add one third of the remaining sauce mixture. Repeat with another layer of noodles, cheese and sauce





Add the last three noodles, the remaining sauce and top with mozzarella cheese

Cover with foil and bake for 45 minutes at 350 degrees. Remove foil and bake 15 minute more or until cheese is brown. let sit about 10 minute before cutting and serving. I usually make garlic bread at this point while the lasagna is resting.

Stir-N-Drop Oatmeal Cookies

Here is another recipe coming out the Betty Crocker Cookie Book. I never made this before now and I am surprised how much I like this cookie. There isn't any butter in this cookie. Usually I miss the butter flavor if it is not in the cookie, but not in this case. These cookies are really good. There is a suggestion that add chocolate chips in the cookies. I will do that next time.

So here is the recipe:

1 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 ginger
1 cup brown sugar
1 cup oats
1/4 cup vegetable oil
2 tbsp milk
1 egg
3/4 cup peanuts ( I did not have any, I left this out)

Heat oven to 375 degrees. Mix dry ingredients together, add sugar and oats, mix in oil, milk, and eggs. Add peanuts. Drop by round teaspoonfuls on greased cookie sheet about 2 inches apart. Bake 8-10 minutes until done.

Jubilee Jumbles


1/2 cup shortening
1 1/2 cups brown sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 3/4 cups flour
1/2 tsp baking soda
1 tsp salt
1 cup chopped nuts - I did not have chopped nuts. I added a bag of peanut butter M&Ms

Blend in shortening, brown sugar, eggs, sour cream, and vanilla. add in remaining ingredients. Drop by round teaspoonfuls and bake at 350 degrees for 8-10 minutes until done.

This vintage recipe appears in Betty Crocker's cookie book from 1963. My mom has this book. I enjoyed going through the recipes in this book. Ethel's sugar cookies and toffee squares are favorite out of this book. When the reproduction of this book came out in about 2002, I had to get a copy of my own.

Mushroom and Onion Dish


I have always been a fan of mushrooms and onions, I like to use these topping on my pizza. We had fresh mushrooms, onions, and sour cream available, so I made them into a lunch dish.
First I sauteed about 1 cup of chopped onions in about a tablespoon of olive oil.
Added about a cup of chopped mushrooms.
I wanted to add some type of seasoning, so I added some Old Bay seasoning.
Once the mushrooms where cooked, I added about 1/2 cup of sour cream.
I liked the end results. I made this up for lunch and could make a good vegetarian dish, or a side dish for a larger meal.

Coupon Purchase

I had a coupon for 40% a regular priced item at Michel's, so I got a skein of Red Heart yarn. I have been lately trying to do the "couponing thing". It is lot of work to clip and organize coupons, not to mention to looks for the sales. So with the yarn I made another pair of my Hybrid Socks and Small Shelled Gloves.
