Dressed Up Manicotti


This recipe uses pre-made manicotti, meatballs, and spaghetti sauces, but it is dressed up into something special.

The ingredients:
1 onion finely diced
8 grams mushrooms
2T olive oil
2 jars plain spaghetti sauce
1 Jar Ragu Double Cheese Sauce
2T Italian seasoning
1 t pepper
2T garlic powder

20 homestyle meatballs
12 pre-made manicotti
16 grams Mozzarella cheese



Saute onions and mushrooms in olive oil. Add sauces, spices, and meatballs. Cook until meatballs are hot. Put a layer of sauce in 9x13 baking dish, add manicotti, cover with remaining sauce. layer cheese on top. bake at 350 degrees for 30 minutes.

Week One of 20 Week Photo Challenge

So I started the twenty week photo challenge. This week we did a self portrait. This is going to be interesting, because I am using an iTouch as the camera. I do LOVE my iTouch. I don't think I could live at this point without it. There are many photo applications for the iTouch/Iphone, many interesting photos have been created with my iTouch.

Brown Sugar Shortbread Cookies



I found the recipe for these cookies on The Sweet Details blog. The author (Amanda) did not really fall in love in these cookies. I did like these cookies and would make them again. What I did different was that I added a whole egg and added a 3.5oz box of crushed Peanut M&M's. I also took a fork and flattened the cookies before baking them.

Chef David's Burger Recipe


Here is a family favorite, we always look forward to David's hamburgers.

3 lbs of Hamburger
1/2 cup Worcestershire Sauce
1/2 cup bread crumbs
2T Seasoning Salt
1T onion powder
1T garlic salt
Pepper to taste

Combine all ingredients, form into patties and grill (or fry up in pan).

Expired Yeast Still Rises to the Occasion



The other day I wanted to make a garlic flat bread to go with the spaghetti and meatballs dish. I planned on making a pizza dough recipe and make it into a flat bread. I found three packages of yeast that had a best use by date of 2009. I was a little skeptical about how the bread would turn out, but the yeast still activated and I ended up with a very tasty garlic flat bread to go with my spaghetti and meatballs.

Made Some Cherry Chocolate Chip Cookies

In the middle of moving into a new place, I made up some Cherry Chocolate Chip Chip cookies. I am dealing with reduced counter and cabinet space. I made the cookies using the Toll House cookie recipe. I added a 12 ounce bag of chocolate chips and a 12 ounce bag of cherry flavored chips. A really tasty cookie. Everyone who has tried them thinks so.

Waffles for Me



I created a version of waffles for me.

Dry ingredients:
1 cup flour
1/4 cup sugar
1 t cinnamon
1/2 t baking power

Wet ingredients
1 cup milk
1/4 cup vegetable oil
1 egg yolk
1 egg white

Combine dry ingredients. Add in milk, oil, and egg yolk. Whip the the egg white and fold in waffle batter. Bake in waffle baker.
For a short cut you can just add the egg whole with the wet ingredients.

These waffles did turn out a little more dense that I liked, but that may because I added 1/2 whole wheat flour. We are in the process of moving and I wanted to us up some of the whole wheat flour.

Holiday Weekend Food and a Tea Cup






Hope everyone had a happy holiday weekend, I made everyone breakfast, cooked up some cookies, and my husband cooked up some burgers. The waffles are called Best Ever Waffles. I found the recipe using the Big Oven app on my iTouch. I also made up some M&M cookies using a chocolate chip cookie recipe. I used whole wheat flour instead. My husband also made a really tasty dinner. He made up his famous hamburgers, he will have to give me the recipe so I can post it here.

I am also showing off a crocheted teacup. I do own real teacups. We are in the process of moving and are currently packed away.

Apple Strudel Muffins






I made up some Apple Strudel Muffins for breakfast today. I got this recipe off
the Big Oven web site. We are in the process of moving and I wanted to used
some of our ingredients before we move. I had exactly 2 cups of cake flour
left and used that instead of the all purpose flour. It did turn our really light like a cake.

So here is the recipe:

2 cups All-purpose flour
1 teaspoon Baking Powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1/2 cup butter
1 cup Sugar
2 EGGS
1 1/4 teaspoons Vanilla
1 1/2 cups apples; chopped

1/3 cup Brown sugar; packed
1 tablespoon all-purpose flour
1/8 teaspoon Ground cinnamon
1 tablespoon Butter

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.
